Graphic 1: As a quick guide my hope is that all Graphic 1 students are pursuing a successful simplified Logotype AND Gravatar and if you have finished those there are lots of Illustrator toolbar quests to learn more skills, Lynda.com Quests for design effectiveness, and an Illustration quest to design your own poster while putting you new pentool skills into effect.

Graphic 2: At this point everyone should be wrapping up their self-directed tutorial quests (post under AI or PS skills) and now you have choice. The primary options are likely Lynda.com design courses, Publication designs, or Bottle Packaging Designs. There are also shorter Illustrator toolbar quests available for students that have not already worked through those.
